Preserved Lemon Mayonnaise

I love preserved lemons! I find that not a lot of people like it, but it gives the lemon/citrus flavour to a dish without the tangy sourness that you get with fresh lemons. You can make this from scratch – make mayonnaise from scratch – or you can use store bought mayonnaise and add the preserved lemons and olive oil to it. I have done it both ways – I find that I like to make an aioli-style mayonnaise when I make it from scratch (with a little bit of garlic) and it works superb!

 Ingredients:

  • 1/2 cup of Mayonnaise (homemade or store-bought)
  • 1-2 pieces of preserved lemon quarter
  • 2 tsps of olive oil

 Preparation:

  1. Remove the pit of the preserved lemon. Gently rinse the lemon rind, and chop into small pieces.plemonmayo03
  2. Mix into the mayonnaise, and slightly thin the mixture with a tsp-2 tsps of olive oil.

Serve immediately.
